As a child in Istria, Marko sat under an olive tree, admiring it and trying to capture the beautiful green color and shape of the olive tree with modest colors at the time. His love for olives continues to this day, and he passed it on to his family. After several years, they were offered the opportunity to cultivate an acre of land in Istria, planted olive trees of the species Istrian white, Carbonaca, Buža, Rošinjola and Buža Puntoža. The trees grow in Bale, far from roads and industry, in clean air and unspoiled nature, which gives the oil an even more authentic taste.
All our olives are hand-harvested and mechanically processed within just a few hours of harvesting. The processing takes place without chemicals and at a processing temperature not exceeding 27 degrees Celsius.
